The AGA Doctor

We were lucky enough to welcome Richard Maggs to our shop on Saturday.


Richard is the AGA Cookery Doctor and has a wealth of experience to share about cooking on every type of AGA.


He was particularly helpful to customers owning the new AGA City60 and the Total Control AGA. He shared top tips and advice about cooking turkeys and joints for Christmas day as well as many other general ideas on how to get splendid results from all AGA cookers.

Customers and staff enjoyed mulled wine and cinnamon toast, really putting us all in the festive mood.


A big thank you to Richard for journeying north to spend time with us. For those of you that missed his 'surgery' you can buy his books on 'AGA Know How' and the series of AGA Tips Books (ideal stocking fillers) from our shop!

Christmas Entertaining

Yesterday we hosted our final pay demonstration of the year with 21 customers enjoying a Christmas entertaining themed event.


We started with salted caramel cake and freshly brewed coffee. Our audience was then treated to a seat to watch someone else preparing Christmas dinner! Well to be honest, it was two people cooking!

Alison made a colourful and fresh cucumber jelly with smoked salmon topping. This made a lovely starter as it was light but flavorsome and being slightly chilled it helped clear the palette a little for the 'main event'.


Next we were  treated to Claire's vegetarian Christmas dinner dish. This was a sweet potato roulade stuffed with herbs and topped with a little Parmesan. This recipe was delicious and proved that just because you might not eat meat, it doesn't mean you have to sacrifice taste. Served with wild rocket and toasted pine nuts we had it as a sort of in between starter and main course!


Next up was the three bird roast. This was a duck inside a pheasant inside a turkey. Garnished with streaky bacon and completed with stuffing and delicious gravy. All the components of a spectacular Christmas dinner. The flavours of the three birds worked really well together and cooking it in the beautiful cast iron ovens of the AGA meant no moisture was lost in the roasting process.



Served along side the three bird roast were some delicious roast potatoes, buttery hazelnut sprouts and peas and orange and honeyed parsnips and carrots.



Chipolatas wrapped in bacon and Claire's special Christmas gravy finished off the main course perfectly.


By this time most folks were already pretty full up, however, we still had a delicious cranberry orange and almond pudding to try. This was chosen especially as an alternative to the usual Christmas pudding. It certainly fitted the role well. It was festive in taste without being heavy as sometimes Christmas pudding can be.


Alison had also done an alternative take on Christmas pudding with a Christmas parfait and served with light golden biscuits. The final dish was some rich chocolate treats. These little droplets had been handcrafted by Claire and included edible gold leaf decoration. A delicious way to round off a substantial Christmas dinner.



As we waved our customers goodbye amongst the best wishes for the forth coming season one lady was heard to say " I have seen Paul Hollywood in York, but these two ladies performance beats his!"

Living North Christmas Fair



We had a great time at the Living North Christmas Fair. It was well run and supported, so a big thank you to the entire team at Living North! Also a thank you to our lovely neighbouring stands - The Talbot at Malton, Malton Cookery School and Andrew at The Patisserie who had the most delicious cakes and sausage rolls. We had a small enclave of 'Malton ness' in the Ebor Stand and it worked very well. Hopefully the folks of York will be encouraged to come out to Malton for the day and sample some of our wares!


The weather was not kind to us on the Friday with torrential rain most of the morning, however the shoppers in and around York are made of sterner stuff and were not daunted by the black skies and enormous puddles. The Sophie Allport textiles flew off the stand, in particular the winter scene and winter stag designs. These designs come as double oven gloves, single gauntlets, aprons and hob hats and were all very popular. 


On Saturday the Mrs Madden aprons were popular - with 'Do my buns look big in this' being the favourite embroidered logo! Also popular were the Richard Maggs Christmas Tips books. These pocket sized books make super stocking fillers. Richards other book 'AGA Know How' was another popular choice. A lot of new AGA owners have very thoughtful friends that carefully considered what to buy their new AGA owning mates (the friends may also have a vested interest in terms of wanting the new owners to cook them dinner on the recently acquired AGA!)

Sunday saw more people making a start on their Christmas shopping. Stocking fillers such as The 4 ages of man / woman tea towels were the flavour of the day. One lucky lady will get a beautiful cream AGA 8 mug teapot for her present. Apparently she loves to have all the family around for tea and the eight mug pot will do a whole round of tea in one brew!


We didn't have a lot left to pack up, but what we have has gone straight in the van to go to Terrington School Christmas Fair taking place tomorrow. We have raided the shelves of the warehouse with some more Christmas goodies to take to the next fair, let's just hope the weather is a bit kinder to us!

Autumn Entertaining

Last week we held our Autumn Entertaining Cookery Demonstration, joined by a full house of 23 lovely ladies for the event.

The ladies sipped fresh coffee and tea whilst browsing around the showroom (including the brand new Cookware textile collection from Sophie Allport) before the demonstration started. For those that had missed breakfast, or just couldn't resist temptation, there was AGA baked courgette cake and pecan and white chocolate cookies to munch on.

Alison made quinoa and sweet potato hot cakes with chorizo. These little patties were cooked on the simmering plate rather like a scotch pancake and served with chorizo and creme fraiche. They make a substantial canape or a neat starter.


The next dish was smoked trout with apple and hazelnuts and apple jelly. This dish was light and fresh, the use of granny smith apples served as a contrast to the flavour of the smoked trout. The addition of the apple jelly really set off the whole dish and made an impressive starter that was relatively easy to make and could be done in advance.

Claire's main course was next. This was a delicious winter casserole type dish. Economical to make using chicken thighs which generously take up the warming flavours of paprika, chilli, thyme, cumin and garlic. The addition of black beans make this a really wholesome one pot dish. Serve with crusty bread and a warm salad of green beans and rocket for a tasty and filling informal party meal.


Next was Alison's cinnamon spiced beef with prunes and almonds. Again, following a theme of cooking for the colder weather this was an interesting way to combine the strong flavour of well cooked steak with the softer, slightly sweeter taste that cinnamon and muscovado sugar bring. Served with couscous for a more modern version of beef casserole with rice!

The puddings were exceptional. Alison created another amazing combination of unusual flavours. A creamy raspberry mousse was served over crushed raspberries and topped with a delicate basil syrup to which just a hint of Pernod had been added.


Whilst Claire made a delicious orange and almond cake (that can also be adapted to gluten-free) and accompanied it with a creamy whole orange ice cream. Finally a delicious thick caramel sauce was forthcoming to finish the dish off. 


Served with Prosecco and or elderflower juice this was a super demonstration. Judging by all the empty plates, our ladies agreed!

Halloween Pumpkin Pie

We recommended this devilishly good pie for halloween made with pumpkin, ginger, cinnamon and nutmeg!


Ingredients: (serves 6)
  • 1x 20cm flan dish
  • 1 x frozen ready rolled shortcrust pastry circle, thawed 
  • 450g pumpkin flesh 
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 -1/2 grated fresh nutmeg
  • 115g caster sugar 
  • 3 eggs
  • 200ml carton creme fraiche
  • Melted plain chocolate to decorate 
Method
Line the flan dish with the pastry circle and place in the refrigerator to rest while the filling is made.

Place the pieces of pumpkin, with the skin on but the seeds removed, into half size AGA poasting tin with 2 tablespoons of water and cover with foil.

2, 3 and 4 oven AGA slide the tin onto the third set of runners down in the roasting oven and steam for 45 minutes to 1 hour or until tender.

Scrape the pumpkin flesh into a bowl, discard the skin and mash to a pulp. Add the cinnamon, ginger and nutmeg, mix well. Whisk together the sugar and eggs then whisk in the creme fraiche. Stir in the spiked pumpkin pulp in two lots. Pour into the pastry case.

Cook on the floor of the roasting oven for about 35-40 minutes until set.

Allow the flan to go cold. Using the melted chocolate, pipe a spider's web on the top.

Served cold with whipped cream.

For conventional cooking cover the raw pastry case with foil and tip in baking beans, bake 'blind' for 15 minutes at 200C, fan over 180C, gas mark 6. Remove the foil and beans then pour in the filling.
Reduce the oven to 180C / fan 160C, gas mark 4 and cook for a further 25 minutes until set.

Tip, if you are making your own pastry add half a spoon of cinnamon to the mixture.

AGA Baking Tips


Baking in an AGA is a unique cooking experience. Like a traditional baker's brick oven, the AGA cooker's ovens provide all-around, consistent radiant heat, meaning your cakes will be light and fluffy and your bread will rise perfectly.

AGA did some research to collate the best tips and tricks to ensure your AGA baked goodies look perfect and taste delicious.

Here are a few:
  1. Don't be afraid to open the door of your AGA to check on food, the heat comes from the sides as well as the base so you won't lose any when opening the door
  2. For crispy on the outside and chewy on the inside meringues, start the meringues in the roasting oven. Leave for two minutes before transferring to the warming oven to dry out
  3. If your cake or biscuits need a little extra taste, try using Dutch Spice Mix ot Speculaaskruiden, it tastes great and adds extra class
  4. Always use eggs at room temperature, as they are easier to whisk into your mix
  5. If you're short on time but want to make quick, fresh bread, try using spelt folou which has a faster rising time.

The launch of the AGA City60 at Country Warmth

We have recently taken delivery of a new AGA City60. We chose the cream traditional model to display and have ordered a black colour way with contemporary features which we hope to take delivery of this week.


The cream AGA City60 is working so customers can see how well the new hot plate with its detachable resting plate works.

We were fortunate enough to have Sara Danesin Medio with us last Saturday for our official Launch of the cooker. We had great fun cooking up a feast and demonstrating some of the City60's unique features to customers. 


Sara cooked halloumi, for a Mediterranean salad, using the bako-glide on the Hot Plate/ Simmering Plate. She showed how useful the resting plate is to thaw frozen raspberries which were then 'jammed' by sitting for a short spell in the simmering oven. These were served with the most delicious miniature scones crafted by Sara. The scones were baked in the top oven on the baking mode. Then the same oven was turned into a roasting oven (all at the flick of a switch!) and Sara's special chorizo and roast potato wedges were made for everyone to enjoy.


We had a fantastic day and we were thrilled with the results including welcoming five new people to the AGA City60 owners club!
