Country Warmth Events

We have had a busy time recently. Earlier this week 26 customers attended the introductory AGA cookery demonstration. We hold these evenings every six to eight weeks and they are a great way of learning to roast, bake, grill, fry, toast, steam, casserole etc on an AGA cooker. We also include some top tips that show how the AGA can help with your laundry, beer brewing, bread making and many other activities! We even had Andrew from the local patisserie in Malton come to the demonstration, not sure we would want to tackle a bake off against Andrew and his friends, even if we did have the help of the AGA!

Then on Wednesday night we ran a very special VIP evening. Over 40 customers, old and new attended the event and were able to view all our latest products accompanied by a glass of fizz and some delicious canapes made by Claire and Alison cooked on the various AGAs' in the shop.

We were able to offer some fantastic deals on new Dual Control and Total Control AGA's that were available especially for our customers only.

We also had our full range of AGA cookware along with aprons from Mrs Madden Make sand The Mole Hole range roller towels. We have lots of new stock from these suppliers so do pop in and have a look over the next few weeks!

Tarts, Pies and Comfort Food

With chilling easterly winds still blowing, our recent cookery demonstration entitled Tarts, Pies and Comfort Food was particularly appropriate.

To warm us up we started with freshly brewed tea and coffee with some delicious lime marmalade tray bake from Mary Berry's latest cookbook.

Then Alison made crab filo parcels with plum chutney. This was a slightly more exotic take on your average samosa and paired with piquant flavoured plum chutney, made a versatile starter or snack for any chilly March day.

Another dish that worked well with the plum chutney was a parsnip, cumin and cardamon tatin. There was a lovely mix of sweet and savoury in this dish and it made an unusual use for a winter vegetable.

For the main course Claire crafted some top and bottom pies. These were delicate suet crust pastry pies packed to bursting with chicken, ham and leeks cooked in a lovely sauce. These pies were really light and tasty - sort of pies for girls!!

The second dish was a pot roast pork belly. This is a dish that the AGA cooks so beautifully, the slow roasting of meat in the simmering oven, surrounded by creative seasoning ingredients makes for delicious pot roasts and this was no exception. Served with creamy mash and homemade kale chips this made a lovely warming dish perfect for this time of year.

We were all pretty full by the time we had munched our way through the first four dishes but undaunted we trenched on with the sticky apple pudding with drunk sultanas! This was a cake/ pudding. Lovely to have as a pudding with a dollop of double cream, or just as nice for a small slice with a cup of tea!

To round the demonstration off we finished with rhubarb crumble trifle. Rhubarb is very much a food of the moment and a few drops of grenadine really helped it to keep its lovely pink colour. Add homemade vanilla custard and a crunchy crumb topping and hey presto, a delicious pudding packed with seasonal flavour.

We were thrilled with our first themed demonstration of the year and look forward to two more this spring. Please contact us for further details or visit our 'Demonstrations' page on the website. You can also email us to join the mailing list for future events.

Happy Chinese New Year

Celebrate Chinese New Year in style and impress your friends by making your very own Potstickers! These simple and delicious dumplings are enjoyed all over Asia.

Ingredients
12 dumpling wrappers
75g beef mince
1/2 small bunch of coriander, finely chopped
1 spring onion, finely chopped
1 small red chilli, deseeded and finely chopped
1 small clove of garlic, finely minced
1/2 teaspoon of grated ginger
1/2 teaspoon corn flour
A small pinch of salt and pepper for seasoning
Non-flavoured oil for pan frying
1/4 cup of water
Soy sauce for dipping

Method
Mix the beef, coriander, spring onion, chilli, garlic and cornflour together in a bowl. Season with salt and pepper and add a drop of water to bind. Place 1/2 tablespoon filling into each wrapper and seal by wetting 1/2 circle of the wrappers. Fold as shown in the video by Beverly Yu. Heat a small amount of oil in a wok and add the dumplings, arranging them like the petals of a flower. This should be done on the boiling plate of your AGA.

Fry the dumplings until they are light brown in colour. Pour over a big splash of cold water and cover immediately with a close fitting lid or tray to steam the upper part of the dumplings. When you can no longer hear the popping and sizzling of the potstickers, remove the lid and let any further moisture evaporate. Invert a small plate over the potstickers and tip them out carefully to keep the shape of the petals. Serve piping hot with soy sauce or your dipping sauce of choice.
